SAUSAGE, APPLE, AND CHEDDAR PASTIES
These Sausage, Apple and Cheddar Pasties make an excellent lunch, either to take to work or eat at home. They also freeze very well too.

Ingredients
- PASTRY Savoury Shortcrust
- Use shop bought puff pastry if you wish or use the Shortcrust recipe here
- 250 g Plain Flour
- 15 g cheese grated cheddar
- ½ teaspoon salt
- 225 g butter cold unsalted
- 57 g cold water this may differ depending on the moisture in the flour.
- FILLING
- 260 g sausage meat uncooked
- 113 g apple I use peeled and diced Granny Smith
- 156 g onion diced
- 57 g cheese grated cheddar
- ¼ teaspoon ground black pepper
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- To make the pastry: Combine the flour, cheese, and salt.
- Work in the butter until larger, pea-sized clumps form.
- Drizzle in the ice water and toss, adding more water if necessary to make the dough come together.
- Divide the dough in half, and shape each half into a disk. Wrap and refrigerate for at least 30 minutes.
- To make the filling: Stir together all the ingredients.
- Preheat the oven to 220°C. non fan 200ºC Fan
- Roll out each disk to about 6mm thickness on a floured surface. Using a 15cm cutter, or circle template, cut out 16 circles, re-rolling the dough as necessary.
- Place an 8th of filling in the center of eight pastry circles.
- Dampen the dough around the filling with water, and top with an unfilled circle.
- Seal by pinching the edges with your fingers or a fork.
- Place the pasties on a baking sheet, and bake for 15 minutes. Lower the temperature to 180°C and bake for an additional 10 to 15 minutes, until golden brown.
- Remove from the oven, and serve warm. Refrigerate any leftovers.
