Ingredients

  • 2 oranges large or 3 medium-sized
  • 6 eggs
  • 250 g ground almonds
  • 250 g sugar caster
  • 1 teaspoon baking powder

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Wash the oranges well. Put them in a large saucepan and just cover with water. Slowly bring to the boil and then simmer, covered, for about 2 hours. Don't let them boil dry, add more water if necessary.
  • Let the oranges cool enough to handle them and cut into quarters. Remove the pips before blitzing the oranges, including the peel, in a processor or blender for a few seconds..
  • Preheat the oven to 190°C, gas mark 5. Grease 10” tin and place a parchment dic in the bottom.
  • Separate the eggs. Whisk the yolks with the sugar until light and fluffy. Add the pulped orange, almonds and baking powder.
  • Whisk the egg whites until stiff. Fold into the cake mixture. Pour into the tin and bake for about 1 hour or until well-risen and golden. If the cake starts to brown too much, cover with greaseproof paper or foil.
  • Allow to cool and sprinkle with icing sugar before serving.

I only made half of the mixture and I didn’t cook the orange. Wonderful cake, was lovely with strawberries and grand marnier chantilly cream. will become one of my most made recipes.
