Flourless Orange and Almond Cake – Recipe
The thing I absolutely love about this cake is it’s sticky, gooey texture and the most adorable orange flavour. who ever thought one could make such a delicious cake without using any Fat or Flour. It’s got just 5 simple ingredients you’re very likely to have in the house right now.

Ingredients
- 2 oranges large or 3 medium-sized
- 6 eggs
- 250 g ground almonds
- 250 g sugar caster
- 1 teaspoon baking powder
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Wash the oranges well. Put them in a large saucepan and just cover with water. Slowly bring to the boil and then simmer, covered, for about 2 hours. Don't let them boil dry, add more water if necessary.
- Let the oranges cool enough to handle them and cut into quarters. Remove the pips before blitzing the oranges, including the peel, in a processor or blender for a few seconds..
- Preheat the oven to 190°C, gas mark 5. Grease 10” tin and place a parchment dic in the bottom.
- Separate the eggs. Whisk the yolks with the sugar until light and fluffy. Add the pulped orange, almonds and baking powder.
- Whisk the egg whites until stiff. Fold into the cake mixture. Pour into the tin and bake for about 1 hour or until well-risen and golden. If the cake starts to brown too much, cover with greaseproof paper or foil.
- Allow to cool and sprinkle with icing sugar before serving.

I only made half of the mixture and I didn’t cook the orange. Wonderful cake, was lovely with strawberries and grand marnier chantilly cream. will become one of my most made recipes.

Hi Clive, My only suggestion would be to use smaller oranges, it can only be the amount of liquid causing it to be too moist. However, it is a very moist cake anyway. Thanks for the 5 Star Rating.
I followed your recipe on this orange and almond cake it turned out nice, however a little too moist.could i have made an error? .I will rate the recipe 5 simply becouse. I thought it was quite easy to make so thanks for that.😊
