As the title say’s ! Nothing says summer like ice cream!

I know, I can hear you saying “is it worth all the hassle making ice cream when it’s so much easier to go to the freezer section in the supermarket?.  Well, if if you don’t already know, it’s never been easier to make your own delicious ice cream without any hassle and even without an ice cream machine, plus, the taste is so  much better.

All you need to make this stunning Vanilla Ice Cream are TWO main ingredients, yes, that’s correct, just 2 ingredients, a little flavouring and a whisk, either hand or electric will do, that’s it.

Vanilla Ice Cream

As far as flavours are concerned, these are limited only by your imagination. Today it’s the basic Vanilla variety to get you started. First you’ll need some Double Cream (whipping cream, you may call it heavy cream)

 

The other ingredient is some Sweetened Condensed Milk (this is NOT evaporated milk as that’s not sweetened) This is the thick, gooey, sweet stuff I use to make the caramel for the top of my Millionaire’s Shortbread recipe, see that HERE . As this is a Vanilla Ice Cream you can use a little Vanilla extract or go down the cheffy route and use a vanilla pod. Personally, for quick simple recipes such as this I just use vanilla extract, why complicate things?

Ingredients

  • 450 ml double cream or whipping cream, COLD
  • 400 ml sweetened condensed milk COLD
  • 2 teaspoon vanilla extract

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • For this recipes I use my stand mixer (Kenwood) with the whisk attachment, but you can use a hand held mixer too, whatever you have. I have in the past just used a balloon whisk but as my arthritis progressed this is now gathering dust in the shed. Whisk on medium/ high speed until soft peaks form.
  • Now with the machine turned off, add the chilled condensed milk to the cream and turn the mixer speed up to high and whisk until the mixture is thick and stiff. Turn off the machine and stir in vanilla extract.
  • Transfer the mixture to a suitable air-tight container and freeze for a minimum of 8 hours or overnight before eating.
  • This will happily stay in your freezer for up to 6 weeks and improve if you can control yourself, which I doubt very much, you’ll want to scoff the lot.

Mr. Paul, I adore your recipes chiefly because of their straightforwardness, limited no. of ingredients, and taste that surpasses many other recipes, I have tried. While I lived in Kuwait, the kids in our household used to love the ice cream and shortbreads I made based on your recipes. Now I am in Canada and face a challenge. A family friend wants me to make ice cream for 40 – 48 guests. Can you advise the required quantity of cream, condensed milk, and vanilla essence? If anyone in the forum can be supportive, that would also be helpful.

Thank you v much for replying to my choc icecream post. No, I didn’t ruin it cos I think I must have listened extremely carefully or read yiur written words re the quantity, and so I did use 600ml or g, and it was really delicious. I will try to flavour next attempt with coffee, my little granddaughter is coming to stay during half term here in uk, and she just loves icecream. And as her mummy is not coming, I won’t be told off for such a decadent and delicious recipe!!!! My hubbie is loving my prac runs!!!! He is another ice cream fanatic . Thank you again
