Ham & Corn Chowder

This Ham & Corn Chowder is a v ery satisfying dish for either lunches or a dinner time starter. I personally enjoy it just with some fresh crusty bread for lunch or supper, especially in these cold damp days.

Ingredients

  • 2 medium potatoes peeled and diced into 1.5cm 1/2” cubes
  • 30 g approx. Fresh frozen or drained canned sweetcorn
  • 200 g cooked ham cut into small cubes this can be fresh or from a tin
  • 1 small onions chopped
  • 1 medium carrot chopped
  • 2 stick celery chopped
  • 2 garlic cloves minced/grated
  • Good pinch of white pepper pepper
  • 350 ml chicken stock this can be Fresh, Carton or from a made-up stock cube
  • 1 tablespoons cornflour
  • 240 ml whole milk
  • 85 g shredded mature cheddar cheese
  • 118 g sour cream if you don’t have sour cream, see my notes below
  • 1 tablespoon chopped fresh parsley

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Place the first 8 ingredients in a large heavy based pan. Cook, covered, on low/medium heat for about 30 minutes or until potatoes are tender.
  • Next in a small bowl, mix cornflour and milk until smooth; stir into soup. Cook on high heat, stirring for a about 1 minute or until thickened to your liking. Finally add the cheese, sour cream and parsley. Stir until cheese is melted then enjoy.
Paul's Tips
Q: Can I make this in my slow cooker?
A: Yes, follow directions but use your crock-pot and cook for 3-4 hours on high.
