Grilled Spanish Sardines
These Grilled Spanish Sardines bring back memories of lazy days on the beach, interrupted only by moving a few paces to one of the many chiringuitos dotted along the beaches in southern Spain, where fresher fish cannot be found (unless you just caught it yourself)
I can see it now, men walking up from the sea with buckets full of just caught sardines and watch them being cooked on open fires until beautifully chard and crisp, served with lots of lemon, paprika and a huge fresh-as-a-daisy salad.

Ingredients
- 2 tbsp olive oil plus extra to serve
- 3 cloves garlic crushed
- 1 tbsp smoked sweet paprika plus extra to serve
- ½, lemon zested and wedged to serve
- 4 sprigs rosemary leaves stripped and bruised
- 1 red chilli deseeded and finely chopped
- 8 sardines washed and gutted
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Put everything except the sardines, into a bowl and mix well together with some salt and pepper.
- Pour into a plastic zip-loc® bag, add the sardines and toss really well to coat the sardines. Cover and chill for a few hours.
- Heat a griddle pan or heavy frying pan until hot. Cook the sardines for about 4-5 minutes on each side or until they are really caramelised and crispy
- Place on a serving dish, drizzle with oil, sprinkle with a little more paprika and squeeze over the lemon wedges.
