Easy Baileys Cheesecake
This scrumptious no-bake cheesecake is so easy to make, you'll love it, I promise.

Ingredients
- For the base:
- 100 g butter Unsalted
- 250 g digestives biscuits crushed
- For the topping:
- 600 g full-fat cream cheese I've tried this with Low Fat Crean cheese and the result was a little disappointing
- 2 tbsp Baileys Irish Cream Liqueur
- 100 g icing sugar
- 300 ml carton double cream whipped
- 100 g Good quality dark chocolate grated
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- To make the base: Melt the butter in a pan DO NOT BOIL, add the crushed biscuits. Mix well until all the butter is absorbed.. Remove from the heat and press into the bottom of a 20cm tin (I prefer to use a Spring-form tin for easy removal). Place in the fridge for 1 hour.
- To make the topping: Lightly whip the cream cheese and beat in the Baileys and icing sugar. Fold in the whipped cream and chocolate. Spoon onto the biscuit base.
- Put in the fridge for another couple of hours or overnight. Once set, decorate with whipped cream and a little extra chocolate, if you like.

Hi Pat, Yes it would work, however if I were you I would cut down the quantity of Tia Maria a little, but that’s just me! Have a good Christmas and stay safe.
Hi. Looking at the baileys cheesecake, and wondered if it would work with Tia Maria. If so would I need to change anything.
