Easy Apple Turnovers were one of the very first things i baked when I opened my bakery back in the late 1960’s. Even though there are various versions of this classic, I don’t thin you can beat it. YES, the old ones are still the best, at least for me they are anyway.

Easy Apple Turnovers

Ingredients

  • 250 g apples peeled & diced
  • 1 Tablespoon sugar brown
  • ½ teaspoon cinnamon
  • 1 Tablespoon lemon juice
  • 1 pkt puff pastry 2 sheets, thawed
  • Flour for dusting work surface
  • 1 egg large, whisked
  • Crystal or Granulated sugar for dressing optional

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat the oven to 200ºC/400°F. Line two baking sheets with parchment paper.
  • In a large bowl, stir together the apples, brown sugar, cinnamon and lemon juice.
  • Unfold the puff pastry sheets onto a lightly floured work surface. Using a rolling pin, gently roll over the pastry to seal any holes then cut each sheet into 4 squares.
  • Using a slotted spoon, scoop a portion of the apple mixture into the centre of each puff pastry square then fold the pastry across diagonally to form triangles. Dampen the edges, then using a fork, crimp together the edges then transfer the turnovers to the prepared baking sheets, spacing them at least 2 inches apart.
  • Cut three small slits in the tops of each turnover then brush them with the beaten egg. Sprinkle the turnovers with the crystal/Granulated sugar (optional).
  • Bake 25 - 30 minutes
