Delicious Cheese Crackers

These Delicious Cheese Crackers are far superior to any you’ll find in a packet. Serve with cheese, soups or enjoy them on their own. Excellent for packed lunches, picnics or as an anytime snack-

Ingredients

  • 120 g butter softened
  • 2 tablespoons cream cheese softened
  • 200 g cheddar cheese grated
  • 360 g plain flour
  • ½ teaspoon salt plus extra for sprinkling, if desired
  • 1 tablespoon chives dried

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat the oven to 180ºC/160ºC Fan
  • In a medium bowl, combine the butter, cream cheese, and cheddar cheese. Mix together with a spoon until well blended.
  • Add the flour, salt, and chives to the butter mixture and mix until well blended.
  • Form the dough into 3/4-inch balls and place on an ungreased cookie sheet. Flatten the balls using the bottom of a drinking glass or with the tines of a fork until each cracker is about 1/4-inch thick.
  • Prick each cracker several times with a fork. Sprinkle with a little salt, if desired.
  • Bake at 176ºC for 12 to 15 minutes until they are very lightly browned around the edges.
  • Remove the crackers to a wire rack and cool.
Tip
To freeze, place on a baking sheet and freeze until solid. Seal in heavy-duty zip-loc freezer bags, label, and freeze for up to 3 months. When ready to eat, toast in a toaster oven or oven until hot and crisp.

Hi Paul, quick question, you mention in your notes at the bottom of your recipe, freezing the crackers, do you mean before cooking them or after? i would have thought freezing them once cooked, would make them go soggy! To be perfectly honest with you though, I could never see that there would be chance to get them to the freezer …… they would be gone in minutes after baking!!! Lol!

Can I use vegan cheeses to make these, slightly different consistency? Thanks.
