Chocolate Florentines

Crisp, crunchy and chocolatey all in one little gem of a treat.

Ingredients

  • 75 g butter
  • 62 g sugar caster
  • 8 g plain flour
  • 50 g Blanched almonds chopped
  • 50 g mixed peel chopped
  • 25 g sultanas chopped
  • 25 g glacé cherries chopped
  • 100 g dark chocolate chopped

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Heat the oven to 180C/fan 160C/gas 4.
  • Line a large baking sheet with baking parchemnt.
  • Gently heat the butter and sugar together in a heavy base saucepan until the sugar dissolves.
  • Now mix in the flour then the nuts, mixed peel, cherries and sultanas.
  • Now put a teaspoonful of the mixture at widely spaced intervals on the baking paper and flatten slightly. Depending on the size of your baking tray you may have to bake these in 2 batches.
  • Bake in the preheated oven for 10 minutes. If they have spread a little during baking you can neaten the edges by pushing them with the side of knife and then let them cool completely.
  • In the meantime melt the chocolate in a bowl over a pan of simmering water or if you’re careful in short bursts in the microwave.
  • Now turn over the Florentine’s and Brush or thinly spread the chocolate over the surface and leave to set.
