These Brussels Sprouts with Balsamic Vinegar & Honey take any roast dinner to the next level. Even folk who dislike sprouts have been known to change their minds after tasting these little beauties.

Ingredients

  • 650 g Brussels sprouts trimmed and cut in half (from top to bottom)
  • 3 tablespoons extra virgin olive oil
  • ¾ teaspoon salt
  • ½ teaspoon black pepper freshly ground
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat oven to 220ºc/Gas 7
  • Place the Brussel Sprouts on the baking sheet together with 2 tablespoons of the oil, the salt, and the pepper.
  • Now mix to make sure they are all coated with the oil, salt & pepper
  • Pace in the preheated oven and turn them once halfway through cooking, until they are tender and golden brown, this should take about 20 minutes.
  • Now drizzle the remaining tablespoon of oil, the balsamic vinegar and the honey over the roasted Brussel sprouts.
  • Mix well to coat them evenly with the vinegar, oil and honey. Adjust seasoning, if necessary with a little more salt & Black Pepper then serve.
Paul's Tips
If you have some Brussel sprouts that are extra large, it’s best to cut them into quarters. They should all be cut about the same size to ensure even cooking.
