Ingredients
1kgspinachwashed, stems removed and leaves chopped
50gbutter
tbspplain flour
250mldouble creamI now use Creme Fraiche
2shallotsfinely chopped
150gcheddar cheesegrated
2tbspbreadcrumbsdried
paprika a large pinch
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
Heat a very large pan then tip in the spinach with a splash of water. Stir until completely wilted then cool and squeeze out all the excess water (a clean tea towel is good for this).Heat the oven to 190c, fan170c, gas5. Melt the butter in a saucepan, stir in the flour and cook for 2 minutes. Whisk in the cream, then simmer for a couple of minutes until the mixture thickens. Add the shallots, spinach and most of the grated cheddar. Stir in the spinach. Spoon into a large baking dish or 6 individual ones. Mix the breadcrumbs, remaining cheese and paprika then sprinkle it over the top.
Bake in a large dish for 40 minutes or until golden, or 25 minutes for the individual ones.
