Spotted Dick – English Steamed Pudding

This Spotted Dick recipe is a good old fashioned steamed pudding which has stood the test of time. Originally the mixture was tied up in a cloth and dropped into a pot of boiling water. unlike todays method of steaming in a basin. I’m sure this will bring back childhood memories for many of you including myself. It’s just the perfect end to the meal on a cold miserable winters day.

Ingredients

  • 300 g plain flour
  • 10 g baking powder
  • 150 g suet shredded, beef or vegetable
  • 75 g sugar caster
  • 110 g currants
  • 1 lemon zest only
  • 200 ml whole milk
  • butter for greasing

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • For the pudding
    , place the flour, baking powder, shredded suet, caster sugar, currants and lemon zest into a bowl and mix to combine.
  • Add the milk and stir to make a soft dough.
  • Grease a pudding basin with butter and spoon the mixture into the basin. Cover with a piece of folded greaseproof paper.
  • Tie around the edge with string to secure the paper and place a damp tea towel over the top. Tie once more with string to secure the tea towel.
  • Place the basin into a large lidded saucepan and fill the pan two-thirds of the way up with water, .Cover with the lid, bring to a boil and simmer for one hour.

Hello, Mr Paul!

Is there a pudding basin size that is standard or most common? I would like to try some of these steamed pudding recipes but there seem to be several sizes to choose from.
