You can make these Sausage Rolls any size to suit your party, you can also make a variety of flavours too using the seasoning recipes I’ve given below. If you wish to make ahead, they can be frozen before cooking or after, if frozen raw you will need to thaw before baking.

Ingredients
- 500 g Puff Pastry
- 1 kg Pork Belly pork is best, or 70% lean pork & 30% Fat pork
- 135 g breadcrumbs
- 36 g seasoning use 36g of any of the seasoning recipe I’ve given below to each Kilo of meat
- 300 g Water Ice COLD

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Yorkshire Pride seasoning
45g Fine Salt
9g White Pepper
6g round Nutmeg
6g Mace powdered If you don’t have any Mace use an extra 4g of Nutmeg
6g ground coriander
6g dried parsley
Lincolnshire Sausage seasoning
45g Fine Salt
9g White Pepper
12g Fresh Sage finely chopped or 12g Dried rubbed sage
6g Nutmeg
Cumberland Sausage seasoning
45g Fine Salt
14g Black Pepper
use 36g of any of the seasoning recipes I’ve given to each Kilo of meat
2g Nutmeg
2g Cayenne
