Sticky Toffee Pudding is one of the countries favourite desserts and if you follow my recipe you can have it on the table in around 15 minutes, that’s a fraction of the time it usually takes to prepare this delicious pudding.

Ingredients

  • 100 g dates stoned, chopped, (fresh or no-soak type)
  • 50 g dried fruit mixed
  • ¾ bicarbonate of soda
  • 175 ml boiling water
  • 150 g sugar light muscovado
  • 75 g butter
  • 2 eggs medium
  • 175 g self-raising flour

For the toffee sauce

  • 150 g butter softened
  • 225 g sugar light muscovado
  • 6 tbsp crème fraîche

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Grease and line base with parchment 6 x 250ml teacups. Put dates and mixed dried fruit into a bowl with bicarbonate of soda and boiling water. Set aside
  • Cream together muscovado sugar and softened butter until light & fluffy. Add eggs then sift in self-raising flour then fold in the fruit mixture.
  • Divide between the teacups. Cook 3 cups at a time for 5 minutes on medium-high (750W). Leave to stand for 1 minute.
  • For the toffee sauce, put softened butter, light muscovado sugar and crème fraîche into a jug and microwave for 2-3 minutes on medium high (750W), then stir.

Very delicious, I halved the recipe but worked well. With a 700w micro I cooked a little longer, but a great success, thank you.
