Quick Sticky Toffee Pudding – Microwaved
Sticky Toffee Pudding is one of the countries favourite desserts and if you follow my recipe you can have it on the table in around 15 minutes, that’s a fraction of the time it usually takes to prepare this delicious pudding.

Ingredients
- 100 g dates stoned, chopped, (fresh or no-soak type)
- 50 g dried fruit mixed
- ¾ bicarbonate of soda
- 175 ml boiling water
- 150 g sugar light muscovado
- 75 g butter
- 2 eggs medium
- 175 g self-raising flour
For the toffee sauce
- 150 g butter softened
- 225 g sugar light muscovado
- 6 tbsp crème fraîche
DISCLAIMER
I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.
Instructions
- Grease and line base with parchment 6 x 250ml teacups. Put dates and mixed dried fruit into a bowl with bicarbonate of soda and boiling water. Set aside
- Cream together muscovado sugar and softened butter until light & fluffy. Add eggs then sift in self-raising flour then fold in the fruit mixture.
- Divide between the teacups. Cook 3 cups at a time for 5 minutes on medium-high (750W). Leave to stand for 1 minute.
- For the toffee sauce, put softened butter, light muscovado sugar and crème fraîche into a jug and microwave for 2-3 minutes on medium high (750W), then stir.

Very delicious, I halved the recipe but worked well. With a 700w micro I cooked a little longer, but a great success, thank you.
