Asparagus with Red Wine Vinegar

The asparagus season is very short here in Spain, it starts in late March with April being the prime month and high season for asparagus. By the end of May, the asparagus is at the end of its season in most locations. Although you will find asparagus available most of the year, this will of course be imported and the problem with that is, the longer it´s been picked the tougher it gets as it loses it´s moisture.

Harvesting Asparagus is real back-breaking operation, all around me at present I see pickers bent double carefully selecting only those spears that are ready. If you watch closely, you can actually see asparagus grow! During warm weather, asparagus can grow up to 3cm in a single day. so for this reason the same field is picked daily and the picking goes on whatever the weather, rain or shine because of the short season.

Asparagus Fun Facts: The name asparagus comes from the Greek language and means “sprout” or “shoot.” Asparagus is a member of the Lily family.Asparagus is related to onions, leeks, and garlic. It’s said that Queen Nefertiti proclaimed asparagus to be the food of the Gods.

This is a quick and tasty recipe you can use as a side dish to almost any meat or fish dish. It´s also excellent eaten hot or cold with a nice salad on a nice sunny day. Although her in Spain they grow the finest asparagus they are the worst at cooking it, if ordered in a retaurant it´s usually boiled to death!! Ingredients

  • 1 bunch fresh asparagus trimmed
  • olive oil
  • salt to taste
  • 2 teaspoons ground black pepper or to taste
  • 3 tablespoons red wine vinegar
  • Dress with grated cheese or toasted pine nuts

DISCLAIMER

I recommend using the Metric measurements (instead of cups & spoons) for more accuracy and better results.

Instructions

  • Preheat the oven to 200 degrees C
  • Line a baking sheet with aluminum foil.
  • Arrange asparagus in a single layer on the prepared baking sheet. Lightly spray asparagus with cooking spray or toss in a bowl with a little oi to coat.
  • Sprinkle salt and pepper over asparagus and drizzle vinegar on top.
  • Bake in the preheated oven until tender, 10 to 12 minutes.
  • Dress with grated cheese or toasted pine nuts
